Chicken with Vegetables and Cashew
OF AN ADULT'S REFERENCE INTAKE
Ingredients
Chicken sauce:
- 2 Chicken breast (deboned/cubes)
- ½ cup soy sauce
- 4 tablespoons starch
Vegetables mix:
- 1 tablespoon sesame oil
- 3 cloves mashed garlic
- 1 tsp fresh and chopped ginger
- 1 carrot peeled and cut
- 3 medium-sized chopped colored peppers
- 1 cup broccoli
- ½ cup fresh mushrooms
- ½ teaspoon grated paprika
- ½ teaspoon black pepper
- ½ teaspoon ground coriander
- ½ teaspoon ground ginger
- ½ cup green onions:
- ½ cup cashews
Soy sauce mix:
- ½ cup soy sauce
- 3 tablespoons vinegar
- 2 tablespoons starch
- 2 tablespoons honey
Method
- Add soy sauce and starch to the chicken cubes
- Stir fry sesame oil with the chicken breast cubes in a non-stick saucepan
- Add the garlic, ginger, carrots, colored peppers, broccoli, mushrooms, paprika, black pepper, ground coriander, ground ginger and mix
- Mix soy sauce, vinegar, starch, honey
- Stir the mixture with the vegetables
- Add the green onion, cashew and stir
- Place chicken in a serving dish, and serve hot
