Ingredients
For the dough:
- ½ kilo white flour
- ½ kilo brown (wheat) flour
- 2 tablespoons sugar
- 2 coffee spoons instant yeast
- 1 coffee spoons cardamom (softly crushed)
- 2 cups warm water
- 4 tablespoons milk (liquid)
For Garnish
Dates Syrup to taste (or sugar cane syrup)
Method
Steps:
To make the dough (better prepared 2 hours before frying the luqaimat)
- Mix well all the dry ingredients (white and brown flour, instant yeast, sugar, saffron and cardamom).
- Pour warm water, little by little until the dough becomes consistent (neither solid nor liquid).
- Now add the milk and mix again.
- Allow the dough to rise (well fermented), so it is better to make the dough two hours before frying Luqaimat (the bites).
- Heat the oil in a deep saucepan
- Start making small balls with the dough to place them in the oil when it’s hot enough
- Pull the balls out of the oil, when their colors turn from golden to brown
- Distribute on kitchen paper to remove excess oil.
To add saffron and orange flavor
- Add a double amount of saffron to the original recipe.
- Now boil the orange juice with sugar and little starch
- Pour on the bites (luqaimat) instead of the dates syrup
To serve: Put the bites in your serving plate and pour the syrup on top.
