Couscous Vegetable Salad

Ingredients

  • 100g couscous
  • 200ml vegetable broth
  • 2 sticks green onions
  • 1 minced red pepper
  • 1 minced cucumber
  • 50g shredded vita cheese
  • 1 minced tomato
  • ​¼ cup minced parsley

Method

  1. Place the couscous and hot vegetable broth in plastic foil-covered bowl. Leave for 10 minutes until it softens and absorbs the broth.
  2. Mix the tomatoes, pepper, parsley, onion and cucumber in a bowl.
  3. Add the couscous, spread the cheese, and serve
