Couscous Vegetable Salad

Ingredients
- 100g couscous
- 200ml vegetable broth
- 2 sticks green onions
- 1 minced red pepper
- 1 minced cucumber
- 50g shredded vita cheese
- 1 minced tomato
- ¼ cup minced parsley
Method
- Place the couscous and hot vegetable broth in plastic foil-covered bowl. Leave for 10 minutes until it softens and absorbs the broth.
- Mix the tomatoes, pepper, parsley, onion and cucumber in a bowl.
- Add the couscous, spread the cheese, and serve
