Curry Rice with Chicken

Ingredients
- 1 tablespoon vegetable oil
- 1 tablespoon ghee
- 6 chests chicken fillet
- 2 sliced onions
- 3 cloves minced garlic
- 2 cups grated carrots
- 1 tablespoon salt
- 1 teaspoon grounded turmeric
- 3 tablespoons curry powder
- 1 teaspoon black pepper
- 3 cups hot water
- 2 cups rice (soaked, washed and strained)
Method
- Dilute ghee and oil in a pan on heat.
- Add the chicken fillet and stir fry until cooked and slightly browned on the sides. Put aside.
- Add the onion and stir until soft, then add garlic.
- Add grated carrots and stir, then add salt, turmeric, curry powder, black pepper, and mix ingredients well.
- Place the fried chicken pieces over the mixture of carrots and onions.
- Pour hot water, then add rice.
- Cover the pot, leave rice on low heat until cooked.
- Serve the rice hot.
