Iraqi Kebab
OF AN ADULT'S REFERENCE INTAKE
Ingredients
- 1 & ½ kilos minced beef
- 1 & ½ kilos lamb meat (with fat / minced)
- 1 & ½ cups mint (green and chopped)
- 1 & ½ cups parsley (minced)
- 2 tablespoons grounded coriander
- Salt, to taste
- 1 tablespoon cumin
- 2 teaspoons black pepper
- 1 tablespoon sumac
- 2 teaspoons hot red pepper
- ¼ cup onions (minced)
- 10 tablespoons flour
- 1 tablespoons lemon juice
- 1 tablespoons sweet pepper
Method
- In a large bowl, mix the beef with the lamb.
- Add mint, parsley, coriander, onion and mix.
- Add salt, cumin, black pepper, sumac, hot red pepper, sweet peppers and mix again.
- Add the flour and pour the lemon juice, toss the ingredients and mix well to get a firm paste.
- Form the kebabs in the form of fingers and stick them in wooden skewers.
- Barbecue the fingers of the kebab on charcoal and flip from all sides until its ready.
