Spicy Potatoes
OF AN ADULT'S REFERENCE INTAKE
Ingredients
- 2 cups vegetable oil
- 3 potatoes (peeled and cut into cubes)
- 2 cloves mashed garlic:
- 2 tablespoons olive oil
- 1 lemon squeezed
- ½ teaspoon ground coriander
- ½ teaspoon ground cumin
- 1 tablespoon pepper molasses
- Salt, to taste
- 2 tablespoons chopped green coriander
Method
- Heat the vegetable oil in a frying pot
- Add the cubes of the potatoes, stir until slightly browned
- Move into a dish with kitchen paper to absorb the excess oil
- Mix the mashed garlic, olive oil, lemon juice, coriander, cumin, pepper molasses and salt
- Add chopped green coriander and stir
- Put the mixture in a saucepan on heat
- Add the fried potatoes and stir fry until fully distributed, and warm
- Place the potato in a serving dish, and serve hot
